Carob Syrup – Gulepp

This is a Maltese recipe made out of carob pods. It is a traditional medicine for coughs and sore throats, it is also proven effective in relieving diarrhea in infants.

Traditional Gulepp contains refined sugar approx 50% by weight and is made by boiling of broken Carob pods in fresh water, then cooking the resulting liquid until toasted, forming a thick treacle-like substance. During the slow cooking process we also add in herbs, fruit zest and cloves. The resulting syrup is rich in iron, potassium, calcium, phosphorous, manganese, barium, copper and nickel plus many other healthy nutrients.

It is either taken directly or added to ice creams and deserts.

Carob Sciroppo


This is derived from the maceration of carob pulp without the addition of sugar. It is very good to sweeten drinks, but also to make cakes, sweets and icings.
It is also recommended as natural remedy to relieve cough, thanks to the expectorant power of carob. This product contains only natural sugars founding the carob pods.
It can also be used as a refreshing tonic via the addition to alcoholic and non alcoholic drink as well as soft drinks. Well suited for addition to sorbets, ice-creams, puddings and cakes, as well as an assortment of sweets which include other natural local products like almonds, figs and grapes.
