Carob Syrup – Gulepp
This is a Maltese recipe made out of carob pods. It is a traditional medicine for coughs and sore throats, it is also proven effective in relieving diarrhea in infants.
Traditional Gulepp contains refined sugar approx 50% by weight and is made by boiling of broken Carob pods in fresh water, then cooking the resulting liquid until toasted, forming a thick treacle-like substance. During the slow cooking process we also add in herbs, fruit zest and cloves. The resulting syrup is rich in iron, potassium, calcium, phosphorous, manganese, barium, copper and nickel plus many other healthy nutrients.
It is either taken directly or added to ice creams and deserts.
